Easy Peanut Butter Banana Bread with Walnuts (A Family-Invented Recipe)

Peanut Butter Banana Walnut Bread



Here's a recipe my daughter and I invented today. We were actually going to make a banana bread but realized we only had 1 banana.

We were using a basic banana bread recipe and doing the following switches:

1/2 cup shorting - 1 stick of butter
3 bananas - 1 banana and 1 cup of CRUNCHY peanut butter
1/2 cup of walnuts - 1 cup of walnuts

* The recipe did not call for milk, but we wanted to moisten the recipe.

The bread/cake is delicious served with hot green tea!

Peanut Butter Banana Bread


There are days when a recipe doesn't quite go as planned—and sometimes those become the best recipes of all.

One afternoon my daughter and I decided to make homemade banana bread, only to discover we had just one lonely banana sitting on the counter. Most banana bread recipes call for three bananas, so we had two choices: skip baking or get creative.

Instead of giving up, we started experimenting.

We substituted crunchy peanut butter for the missing bananas, increased the walnuts, added a little milk for moisture, and hoped for the best.

The result surprised us both.

Instead of ordinary banana bread, we ended up with a moist peanut butter banana bread that tasted almost like dessert yet was hearty enough to enjoy with a cup of hot tea or coffee.



Why This Recipe Works

The peanut butter adds richness and moisture while the single banana still gives the bread its classic banana flavor.

Using crunchy peanut butter also adds little bits of peanuts throughout the loaf, giving every slice a little extra texture.

The chopped walnuts complement both flavors beautifully.


Easy Peanut Butter Banana Bread Recipe

Ingredients

  • 1 cup sugar
  • 1 stick butter, softened
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup milk
  • 1 ripe banana, mashed
  • 1 cup crunchy peanut butter
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 325°F.
  2. Grease a loaf pan or Bundt pan.
  3. Cream together the butter and sugar.
  4. Beat in the eggs.
  5. Mix in the mashed banana and peanut butter.
  6. Stir in the flour, baking soda, milk, and walnuts until just combined.
  7. Pour batter into the prepared pan.
  8. Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool before slicing.

Makes one loaf or one Bundt cake.

A Happy Kitchen Accident

Some of my favorite recipes have come from simply using what we already had in the pantry.

This peanut butter banana bread was one of those happy accidents that has stayed in our recipe collection ever since.

Sometimes the best family recipes aren't found in cookbooks—they're created while standing together in the kitchen, making do with what's on hand.
