Tip: If using canned salmon, remove any large bones or skin if desired. The small soft bones are edible and provide extra calcium.
Fish Patties
Drain 1 can of fish, add 1 chopped onion, sprinkle garlic, salt, pepper, 2 eggs and crumble into mixture 8-10 saltine crackers. Form into patties and fry in grease. Serve with baked potato, rice, or macaroni and cheese. Simple, economical, and delicious!
Serving Ideas
Fish patties pair well with many simple side dishes, including:
- Mashed or baked potatoes
- Macaroni and cheese
- White or brown rice
- Green beans
- Coleslaw
- A garden salad
- Corn on the cob
If you have leftovers, they're also delicious the next day on a sandwich with lettuce, tomato, and a little tartar sauce or mayonnaise.
