Artichoke dip: Easy Baked Artichoke Dip with Rotel and Parmesan Cheese

If you're looking for a quick appetizer that's always a crowd-pleaser, this baked artichoke dip is hard to beat. It comes together in just a few minutes with a handful of simple ingredients and is perfect for game day, holiday gatherings, potlucks, or movie night at home. The combination of artichokes, Rotel tomatoes, Parmesan cheese, and seasonings creates a warm, creamy dip that's delicious served with tortilla chips or crackers.

Ingredients:

(1) 14oz can QUARTERED artichoke hearts, drained and cut up
(1) can ORIGINAL Rotel (diced tomatoes and chiles), drained
(1/2) cup mayo
(1/2) cup grated parmesan cheese
(1) tsp garlic powder
(1/2) tsp Worcestershire sauce


Rotel and artichokes



Drain artichoke and Rotel in colander. Chop up artichoke hearts.


Best artichoke dip

Combine all ingredients in dish and bake at 375 for 30-35 min until bubbly. Let cool for 10 min or you'll burn your tongue!



Serve with your favorite chips.
This was REALLY good! I'll be making this again!

Serving Ideas

This dip is delicious served warm with:

  • Tortilla chips
  • Crackers
  • Toasted baguette slices
  • Pretzel crisps
  • Fresh vegetables like celery, carrots, or bell pepper strips

If you're preparing it for a party, you can assemble the ingredients ahead of time and refrigerate until you're ready to bake.

So glad you liked it. I have made this more than anything else and it's always the first to go. I will probably make it this weekend too so I can post about it right before the holidays in case someone wants to make it. The last few times I made it I didn't take a pic.

I'm going to add a can of drained chicken to my next batch of artichoke dip. Maybe even a little spinach too.

I make an awesome fiesta dip with ground beef that we eat entirely as a meal. I'll be posting that soon.
